Oil Free Wholemeal Bread


  • 1 heaped tbsp (~35g) vital wheat gluten, made up to 300g with Waitrose Canadian wholemeal bread flour
  • 225 mL water
  • 1/4 tsp salt
  • 1 tsp bread machine yeast
  • 2 heaped tbsp shelled hemp seeds


This is how I start:

  1. Get a bowl or large jug on some scales and set to 0. Add a heaped tbsp vital wheat gluten, then add the Waitrose flour until you have 300g in total.

Adding stuff to the bread machine:

  1. Add the water to the bread machine pan. Add the salt.

  2. Next tip in the flour.

  3. Spread the flour around so it covers the water.

  4. Add the seeds and the yeast. The seeds can be added at the beginning of the programme, you don’t need to wait until the machine beeps at you to add them. 

Set up the machine:

  1. Use a 500g wholemeal loaf programme. I select light coloured crust. Using my Russell Hobbs machine this translates to a small wholemeal loaf, light crust.
