Vegan ‘Cheese And Onion’

It took me a while to get the hang of making caramelised onion without oil. I find the trick is to sauté finely sliced onion in diluted soy sauce then I finish with balsamic vinegar. When you add onions cooked in this way to hummus and fermented tofu (Taifun Feto) you get something akin to cheese and onion. Great in a sandwich or on toast!

Servings: 1 Person
Ingredients
For the hummus:
  • 1 tin chickpeas (drained)
  • 1 tbsp tahini paste
  • 1 tbsp lemon juice
  • 4 tbsp unsweetened plant milk (I use cashew milk)
  • garlic granules and salt (to taste)
For the caramelised onion:
  • 2 small red onions (finely sliced)
  • 1 tsp soy sauce
  • balsamic vinegar (to taste)
To serve:
  • bread
  • fermented tofu (Taifun Feto)
Instructions
Make the hummus:
  1. Blitz all the hummus ingredients in a food processor. Season to taste.

Make the caramelised onion:
  1. Add the soy sauce, a splash of water and onion to a non stick pan. Cook on low with the lid on the pan. Stir from time to time and add a splash of water every time the onions start to stick.

  2. After about 15 minutes the onion should be cooked. Add a splash of balsamic vinegar.

Serve up:
  1. Spread 2 slices of bread thickly with hummus then fill with the onion and fermented tofu.
