Things To Do With Gravy
When I make gravy I make a big batch of it and either freeze portions to use later, or use it to make different dinners over the course of a few days. Of course gravy is lovely with vegan burgers, steamed veggies and potatoes, but you can also use it to make a quick stew.
To make gravy stew, first steam or boil a load of veggies. Anything goes really: I like onion, celery, carrots, butternut squash, kale, mushroom and peas. Once the veg is soft (but not mushy) I add a drained tin of lentils and a drained tin of beans (black eye beans are nice in this dish because they add texture). Finally I pour over the gravy to make a sauce. Taste and season if it needs it, and serve with crusty bread.
You can also use gravy stew to make a cottage pie. Once your stew is made, pop it in an oven proof dish and top with mashed potato. Bake at about 200C until the top is crispy, then serve.
