Baked sweet potato: prick your potato all over and place in an oven proof dish with a lid. Lid on and into the oven at about 180C until the potato is soft and starting to ooze caramel. The time will depend on the size of the potato: it usually takes somewhere between 1 and 2 hours. Don’t overcook or it will start to shrivel. Baking in a sealed container means the skin stays soft.
