Spiced Cauliflower Soup

An easy to make, creamy soup. If using a soup kettle you may need to adjust the amount of cauliflower depending on your kettle volume.

Free from: gluten, nut, oil, soya, wheat, yeast

Spiced Cauliflower Soup
Servings: 4 People
  • 1 medium cauliflower head (about 400-500g) (leaves and stalk removed)
  • 1 tin white beans (I use butter beans)
  • 1 onion (skin removed)
  • 1/2 tsp ground cumin
  • 1/4 tsp turmeric
  • salt and black pepper (to taste)
  1. Roughly chop the veg and add the drained beans and spices. Add enough water to just cover.

  2. If using a soup kettle, set the machine to the purée soup programme and press start. 

  3. If using a saucepan bring to the boil then turn the heat down and simmer until the veg is all soft. Blitz in a food processor. 

  4. Season to taste.
