Speedy Cherry Crumble

This recipe makes a bowl full of healthy loveliness. It’s only slightly crumble-like, but I didn’t know what to call it! So speedy cherry crumble it is! It makes a perfect breakfast, pud or snack.

Speedy cherry crumble consists of warm fruit topped with a mix of oats and pecans. The oaty pecan mix is reminiscent of a crumble topping because you get a bit of stodgy where the oats meet the fruit juices, plus crunchy bits from the pecans. I dollop plain soya yoghurt on top, which is nothing like custard or ice cream, but is still nice!

To make this a cherry crumble you need to use cherries. I use frozen cherries because they are reasonably priced and available year round. You can make this with other fruit though. It is easy to swap frozen cherries for other frozen berries. Cherries and blueberries are quite sweet, but if you go with more tangy berries, like raspberries or blackberries, you may need to sweeten them slightly with date syrup, maple syrup, date sugar or coconut sugar. The ‘crumble’ is a mix of regular rolled oats and pecans. I use regular rolled oats, rather than jumbo oats, because they absorb the warm fruit juice and stodge-up in minutes. To get maximum crunch from the pecans, I roast them first (check out my instructions for roasting nuts here).

The final ingredient is soya yoghurt. I like plain yoghurt, and buy mine from Tesco. It only contains soya, cultures and calcium. Use whatever yoghurt you like best, or replace with custard or ice cream for a more indulgent bowl.

Gluten, wheat free: use suitable oats

Nut free: omit pecans or replace with seeds

Soya free: replace soya yoghurt with coconut yoghurt

Yeast free: use non-yeasty fruit

Speedy Cherry Crumble
Servings: 1 as a meal or 2 as a snack
  • 1 cup frozen cherries
  • pinch ground cinnamon
  • 2 tbsp quick cook rolled porridge oats
  • 3 tbsp soya yoghurt
  • 1 tbsp pecans
  1. Combine the frozen cherries and cinnamon, then microwave for about few minute until warm.

  2. Chop the pecans.

  3. Top the warm cherries with the oats and pecans. Dollop on the yoghurt.
