This porridge is simply flavoured with blueberries: I use frozen because they are good quality and inexpensive year round. A little date adds sweetness and lifts the dish.

This is a vegan recipe
- 1/2 cup sprouted or rolled oats
- 1 medjool date (pitted and finely chopped)
- 1/2 cup frozen blueberries (defrosted)
If you want you can soak your oats overnight (or for a few hours): simply combine oats and date, and add just enough water to cover. Refrigerate until ready to cook.
If you haven’t already, combine oats and date and just enough water to cover. Microwave or heat in a pan until the water is absorbed. Add a little more cold water, stir and cook again. I cook like this until the oats have softened but there is still some texture. Cook a little longer if you prefer a creamier porridge.
Stir through the defrosted blueberries and heat through then serve.
