Nutty Date Porridge
If using jumbo or sprouted oats, I’d go for an overnight soak. If using regular porridge oats, soaking isn’t necessary. Use whatever nut butter you like best: hazelnut is lovely! Add some cocoa powder if you fancy it chocolatey.
Free from: oil, soya, wheat
Gluten free: use suitable oats
This is a vegan recipe
- 1/3 cup porridge oats
- about 1 cup water
- 1 medjool date (pitted and chopped)
- 1/4 tsp cinnamon
- 1 heaped tsp crunchy nut butter
- 1/2 tsp cocoa powder (optional)
If using jumbo or sprouted oats, cover with water and soak overnight (or for a few hours). If using regular porridge oats there’s no need to soak: cover with water and cook immediately.
Before microwaving add dates and cinnamon. Microwave for 30 seconds then stir. Add more water if necessary and microwave again for 30 seconds. Continue to cook like this until the oats are soft and the porridge is the correct consistency.
Add nut butter (and cocoa if using) and serve.
