Multi Whole Grain Bread

This bread machine recipe is oil free and packed with healthy whole grains and seeds. The recipe is reasonably flexible: you could substitute the oats with barley flakes, quinoa flakes or more rye or wheat flour. And the seeds are optional. You could substitute the sunflower and pumpkin seeds for more hemp, or vice versa, or you could throw some chopped walnuts in instead (or as well as).

Multi Whole Grain Bread
Ingredients
  • 230 mL water
  • 1/3 tsp salt
  • 50 g vital wheat gluten
  • 50 g whole rye flour
  • 50 g porridge oats
  • 150 g wholemeal bread flour (Waitrose Canadian wholemeal bread flour is the best to use)
  • 30 g raw buckwheat groats
  • 1 tbsp shelled hemp seeds
  • 1/2 tbsp sunflower seeds
  • 1/2 tbsp pumpkin seeds
  • 1 tsp bread machine yeast
Instructions
Toast your seeds:
  1. Pumpkin and sunflower seeds are best toasted. Toast a big batch, cool, then store in an airtight container. To do this add seeds to an oven tray and pop into an oven at 150C for about half an hour. You’ll need to move the seeds around from time to time. Cooking time varies but they are ready once they smell delicious and are starting to turn golden. 
Weigh out the dry ingredients:
  1. Weigh out the gluten, rye flour, oats, wholemeal flour and buckwheat groats. I weigh them all into one large jug. Add the toasted seeds and the shelled hemp and stir through. 

Make your bread:
  1. Add the water and salt to your bread machine pan. Pour the flour / seed mixture on top, then add yeast on top of the flour island. 

  2. Set your bread machine to a 500g wholemeal loaf programme and start. The machine does the rest!
