Microwaved Fruit: Speedy Stewed Apple
This microwaved fruit recipe is a favourite with our family and it’s so quick to make.
I use eating apples for this recipe because they are sweeter than cooking apples and they retain more texture. You can use pretty much any variety of eating apple. However I wouldn’t use pink lady apples, which tend to go a bit spongy and odd when cooked. Keep pink ladies for eating raw.
To add a touch of sweetness to this dish I cook the apples with organic dried apricot. As a variation you could replace the apricots with other dried fruits such as currants or dates. I don’t cook with refined sugar: dried fruit is my preferred sweetening ingredient because it is a whole food. However if you are yeast intolerant and you don’t tolerate dried fruit (which is often coated in yeast) then feel free to sweeten the apple with your favourite sweetener.
I tend to eat microwaved fruit as it is. However, to make the dish more substatial, for example if you wanted to eat it for breakfast, then you could top with granola. For extra protein, dollop on some plant based yoghurt. For crunch, protein and some healthy fats top with roasted nuts or seeds (for details on how to roast nuts see here).

Yeast free: omit dried apricot or replace with a suitable sweetener
This is a vegan recipe
- 2 eating apple
- 6 organic dried apricots
- pinch ground cinnamon
Peel and core the apple then cut into chunks or slices. Chop the apricot.
Pop all the ingredients into a microwaveable bowl with a lid. Add about 1 tablespoon of water and stir. Next put the lid on loosely and microwave on full power for about 2 minutes.
Stir the fruit. If the apple pieces were chopped up quite small then 2 minutes of cooking may be enough. However if the apple is still crunchy at this stage then microwave for another minute or so. You want the apple to be soft but not mushy.
Once the apple is cooked through, leave to cool down slightly before serving.
