Hummus Spaghetti With Kale
To make a quick pasta dish, boil whole grain or legume spaghetti until almost completely cooked, then add a couple of handfuls of kale and allow it to wilt in the water. It will only need a minute or two. Drain, keeping some of the cooking water, then stir through hummus. My recipe for homemade, oil free hummus can be found here. Add back a little cooking water if it needs to be loosened. Season to taste and serve with salad.
