Courgette And Kale Soup

This soup recipe is borrowed from my Mum who makes courgette soup with just onion, courgette and stock. I add greens too: here I use kale but you can substitute for any leafy green veg. Watercress works well. As a variation you can also pop in some frozen peas.

In the picture I serve with cooked chickpeas and nut butter on toast.

Courgette And Kale Soup
Servings: 4 People
  • 1 medium onion (chopped)
  • 3 medium courgettes (sliced)
  • 2 handfuls kale
To flavour:
  • 1/2 tsp each of onion granules, garlic granules and Italian seaononing
  • salt and black pepper (to taste)
  1. Add everything to a pan or soup kettle and pour over about 700mL water, or enough to almost cover.

  2. If using a soup kettle set to the purée soup programme and start.

  3. Is using a saucepan bring everything to the boil, then turn down the heat and simmer until the veg is all soft. Purée in a liquidiser.

  4. Taste and adjust seaaoning if necessary.
