Chocolatey Gooey Bites

These little sweet bites are rich and gooey. Eaten warm they will be soft on the inside but if left to cool they will firm up a bit.

Choclatey Gooey Bites
Ingredients
  • 1 tin chickpeas (drained, rinsed and patted dry)
  • 4 medjool dates (finely chopped)
  • 3 tbsp nut butter
  • 1 tsp cocoa
  • 1 tbsp milled chia
  • cashew milk
Instructions
  1. Blitz all the ingredients except the cashew milk together in a food processor. If the mixture does not come together as a dough add a little cashew milk (a teaspoon at a time) and pulse to form a dough. Taste the mixture to check it’s sweet enough: if not add another chopped date or other sweetener and blitz again. If you can’t wait you can eat the mixture now as a kind of sweet hummus, or to form fudgy bites... 

  2. Press the dough into a lined 1lb loaf tin. Bake at around 180C until the top is dry and crispy, about 30 minutes.

  3. Cool on a wire rack, then chop into bite sized pieces. These little cakes are quite moist and squodgy.
